Designed for individuals interested in the retail and hospitality sectors of the industry, The International Culinary Schools at The Art Institute of Vancouver programs offer the Wine & Spirit Education Trust (WSET) certificate program curriculum. Centered in the U.K., the WSET programs are recognized as the standard in comprehensive training for the wine and spirits trade. Recently, the school announced the addition of the prestigious WSET Diploma program. Head instructor Mark Shipway is himself a graduate – with honours – of the diploma program. He regards his own achievements as proof of the program’s success.“I was able to shape a career and to change from one industry into another. I think my success is a testament to the educational program that I completed, and I am evidence that these courses can change your career and change your life." Shipway’s passion for wine arose at an early age. Holidays with his family took him to France – a country where wine is both an everyday drink and a source of national pride. As an adult and amateur wine enthusiast, he continued to return to France, traveling through wine country and enjoying the local food & wine. To this day, the wines of France remain amongst his favourites. It was the wines of another continent, however, that seduced Shipway into entering the wine and spirits trade full-time. In the mid 1990s, Shipway was living in New Zealand and so enjoyed his journeys through that country’s grape growing regions, that he decided leave his job in the shipping industry and transform his love of wine into a career. In 1997, he returned to his native England and enrolled in the Higher National Diploma in Wine Studies at the University of Brighton – the UK’s only school for viticulture (the cultivation of grapes) and oenology (the study of wine making). While attending school, he cut his teeth in the retail trade, working part-time for a specialist wine merchant, and was introduced to the fine wine trade. Likewise, it was through this work that he discovered the trade side of the industry, deciding to shift his focus from wine production to retail. During his time in Brighton, Shipway also obtained the Wine & Spirit Education Trust (WSET) Diploma, highly regarded across the world as the benchmark qualification for the wine and spirits trade. Shipway excelled and in 1999 he achieved the qualification with honours. Upon graduating from University, Shipway ventured to the wine lands of South Africa’s Western Cape. Living in the picturesque town of Tellenbosch, he worked for various wine estates including the prestigious Neethlingshof and Stellenzicht. There he cultivated a lasting love for South African wine and culture. “I was conducting cellar tours and tastings, explaining the mechanics of wine production to estate visitors. Essentially I was also doing a great deal of PR and marketing work." He returned home in 2000 to take advantage of a Diploma-won scholarship, completing an internship with Waitrose Ltd (the UK’s leading multiple grocer) where he worked alongside several Masters of Wine. He was later recruited by Direct Wines – the UK’s third largest wine retailer where, in addition to working in sales and marketing, he advised customers on wine choices, vintage information and wine and food pairings. His WSET training and work with Direct Wines has led him into the field of wine instruction, teaching WSET courses and Diploma revision tutorials to his work colleagues. Achievements include being a member judge for The International Wine and Spirit Competition, the premier competition of its kind in the world.
